«Αυτό που ζούμε μας δίδαξε ότι δε μπορείς να βασίζεσαι σε προβλέψεις και εκτιμήσεις. Ίσως να είναι αυτό τελικά που σταματά να σε κάνει και ευέλικτο». Για τον Γιώργο Λαγουδάκη, έναν εκ των ιδρυτών της Web Hotel Way, της πιο φρέσκιας πρωτοβουλίας γύρω από το Hotel & Project Management στην Ελλάδα τα τελευταία χρόνια, δεν υπάρχει καμία κρυστάλλινη σφαίρα για την πιο βαριά βιομηχανία της χώρας μας. Ο τουρισμός είναι ζωντανός οργανισμός και μόλις η κάθε του νέα τάση υιοθετηθεί από τους μεγαλύτερους παίκτες του κόσμου, αλλάζει ξανά.

Για τον συνεργάτη του ωστόσο, Κώστα Μάμμο, η πιο αξιόπιστη πρόβλεψη που μπορεί να κάνει κανείς είναι η στροφή σε μία πιο προσωποποιημένη προσέγγιση. «Η πραγματικά τεράστια αλλαγή που βλέπουμε είναι ότι όλοι θα στραφούν στο small luxury, την πιο εξεζητημένη και ποιοτική προσέγγιση», εξηγεί. «Το ίδιο θα κάνουν και οι μεγάλες εταιρίες και εκεί θα έχει ενδιαφέρον να δούμε πώς θα προσαρμοστούν. Σκεφτείτε τους ξενοδόχους που είχαν συνηθίσει να έχουν ξενοδοχεία για 800 ή 1.300 άτομα να επενδύουν σε ξενοδοχεία για 80-120. Ολική αλλαγή φιλοσοφίας».

Τη Web Hotel Way την οραματίστηκαν ρομαντικά. Μία εταιρεία που δε θα λειτουργούσε ακριβώς σαν εταιρεία. Θα ήταν απλώς το δεξί χέρι των ξενοδόχων, από οικογενειακές επιχειρήσεις ως γιγάντιους ομίλους. «Δεξί χέρι για εμάς σημαίνει σε προστατεύω, σε γλιτώνω από κακοτοπιές, σου γλιτώνω χρήματα, σε βοηθάω να αναπτυχθείς, σε κρατάω πάντα επικαιροποιημένο», περιγράφουν. Αυτά τα πετυχαίνουν με ένα ευρύτατο φάσμα υπηρεσιών που τις προσαρμόζουν στις ξεχωριστές ανάγκες κάθε μονάδας. Αναλαμβάνουν τη δύσκολη δουλειά του back office εφόσον κριθεί απαραίτητο – τόσο τις κρατήσεις όσο και τις πωλήσεις – στήνουν το business plan, εκτελούν χρέη concierge, εκπαιδεύουν το προσωπικό, και κάνουν θαύματα με το Food and Beverage Consulting με τη βοήθεια βραβευμένων με Michelin συνεργατών. Τονίζουν επίσης τη σημασία του pre/re-opening, μίας υπηρεσίας που τη δεδομένη στιγμή θεωρείται περιττή στην Ελλάδα αλλά μπορεί να σε προετοιμάσει για την επιτυχία από το μηδέν, με καταρτισμένους επαγγελματίες να καθοδηγούν κάθε σου βήμα σε σχέση με όλα τα τμήματα της μονάδας.

«Το αγαπημένο μας εργαλείο είναι η Web Hotelier που σου δίνει την δυνατότητα να δημιουργήσεις έναν κεντρικό άξονα, έναν πύργο ελέγχου», αναλύουν. «Χρησιμοποιούμε επίσης οποιοδήποτε εργαλείο μάς δίνει την δυνατότητα να φέρουμε παραπάνω πωλήσεις, εργαλεία που μας τοποθετούν σε πλατφόρμες όπου βρίσκονται οι μεγαλύτεροι travel agents, εργαλεία που μας εμπλέκουν με τις αεροπορικές εταιρείες. Ένας ξενοδόχος έχει τόσα πράγματα να κάνει που δεν προλαβαίνει να έχει καθαρή εικόνα για όλες τις εξελίξεις. Γι’ αυτό κιόλας πιστεύουμε πως στα επόμενα χρόνια όλα τα ξενοδοχεία θα έχουν ανάγκη εταιρίες σαν την Web Hotel Way».

«Οι υπηρεσίες μας είναι ξεκάθαρες και είναι για όλους όσους θέλουν να αλλάξουν την προσέγγισή τους», συνεχίζει ο Κώστας. «Για όσους θέλουν να διαφοροποιηθούν και να γίνουν μοναδικοί σε αυτό που κάνουν, είτε μιλάμε για τέσσερα δωμάτια στον Πόρο, είτε για luxury hotel στην Κρήτη. Υπάρχει ο μύθος ότι τις εταιρείες δεν τις ενδιαφέρει να ασχοληθούν με μικρές, ή όχι και τόσο καινούργιες δουλειές. Τεράστιο λάθος. Εμείς τα βλέπουμε όλα ως challenge».

Οι δυο τους εντοπίζουν τη διαφορά στους χειρισμούς τους στο γεγονός ότι ξεκίνησαν και οι ίδιοι ως ξενοδόχοι. «Έχουμε δοκιμάσει τα πάντα, από όλα τα προγράμματα μέχρι την τελευταία λύση marketing», εξηγούν. «Γι’ αυτό καταλήγουμε σε πρόταση για τους συνεργάτες μας γνωρίζοντας 1000% ότι είναι η ιδανική για αυτούς. Πρώτα έχουμε φάει τα δικά μας μούτρα, ώστε να μπορούμε να γλιτώσουμε των συνεργατών μας», λέει γελώντας ο Γιώργος.

«Έχουμε ένα πολύ δυνατό portfolio συνεργασιών, αλλά δυστυχώς έχουμε και πολύ ισχυρές ρήτρες εμπιστευτικότητας», επισημαίνουν. «Μπορεί να μιλήσει οποιοσδήποτε μαζί μας και να του αναφέρουμε αναλυτικά τις δουλειές μας, όμως δημόσια δυσκολευόμαστε. Έχουμε άλλωστε μία συγκεκριμένη φιλοσοφία όσον αφορά το portfolio. Πιστεύουμε ακράδαντα ότι δημιουργεί απευθείας μία εικόνα, είτε θετική, είτε αρνητική, και σε προϊδεάζει χωρίς καν να έχεις γνωρίσει τους ανθρώπους της εταιρείας. Εμείς θέλουμε να γνωριστούμε και να επικοινωνήσουμε μαζί σου και, αν δεν σου κάνουμε κανένα πρόβλημα, αλλά θα θέλαμε να μην έχει επηρεαστεί κανείς από τη δυναμική άλλων συνεργατών. Αν δει ένα μικρό ξενοδοχείο ότι δουλεύουμε με κάποια πολύ διάσημα brands, δε θα μπει καν στον κόπο να επικοινωνήσει μαζί μας και δε θέλουμε σε καμία περίπτωση να συμβαίνει αυτό. Είμαστε περήφανοι για όλες μας τις δουλειές και όλες τις αντιμετωπίζουμε με το ίδιο πάθος».

Οι συνεργασίες που μπορούν ωστόσο να μοιραστούν περιλαμβάνουν μεταξύ άλλων το Villa Victoria στη Θάσο, το Creta Vitalis στα Χανιά, μία εντυπωσιακή δουλειά που ετοιμάζεται στο Παλιούρι της Χαλκιδικής, ένα πρότζεκτ που θα συζητηθεί στη Μύκονο, ένα μεγαλύτερο που αναπτύσσεται στη Χαλκιδική και φυσικά το διαμάντι της Λίνδου στη Ρόδο, το Casita Casita Lindos. Μία δημιουργία της αρχιτέκτονα Βάνα Περνάρη που εναρμονίζει απόλυτα την εκλεπτυσμένη του πολυτέλεια με το φυσικό κάλλος του τοπίου. Η πληρότητα του ξενοδοχείου ξεπέρασε κάθε προσδοκία.

«Κάναμε συζητήσεις πάνω από ένα μήνα και ζητήσαμε το ελεύθερο να επέμβουμε όπου θεωρούμε ότι χρειάζεται», θυμάται ο Γιώργος. «Πέσαμε πάνω στον COVID-19 αλλά δεν πτοήθηκε κανείς μας. Η ομάδα μας έστησε όλο το ξενοδοχείο, με στόχο να είναι ένα φιλικό περιβάλλον σε μία τέτοια περίοδο κρίσης. Παρακολουθούσαμε την αγορά και ψάχναμε ανά πάσα ώρα και στιγμή ποιοι μπορούσαν να έρθουν στην Ελλάδα. Τα αποτελέσματα μας δικαίωσαν. Φτάσαμε να έχουμε πάνω από 90% πληρότητα Σεπτέμβρη και Οκτώβρη!».

Όσο για τη συμβουλή του στους ξενοδόχους για το καλοκαίρι που έρχεται, βασίζεται και αυτή στην ίδια φιλοσοφία. «Πρέπει να χαλαρώσουν οι πολιτικές χρεώσεων και ακυρώσεων», επισημαίνει. «Πρέπει να βγει το ανθρώπινο κομμάτι μπροστά. Ο επισκέπτης θα το εκτιμήσει. Πρέπει, επίσης, να ψάξουν πού αλλού μπορούν να τοποθετήσουν το ξενοδοχείο τους ως προς τις πωλήσεις. Να οργανώσουν όσα παραμελούσαν».

Η εμπειρία τους και οι επιτυχίες που ήδη μετράει η Web Hotel Way εντός και εκτός συνόρων, τους επιτρέπουν να είναι αισιόδοξοι και ρεαλιστές ταυτόχρονα.

«Οι προσωπικές μας απόψεις για τον τουρισμό έβλεπαν ως αναγκαίο κακό το σημείο μηδέν, αλλά προφανώς δε μπορούμε να πούμε ότι χαιρόμαστε για τον τρόπο που έγινε. Θέλουμε να βλέπουμε με αισιοδοξία το μέλλον ωστόσο», δηλώνουν με σιγουριά κλείνοντας. «Θεωρούμε πολύ σημαντικό το γεγονός ότι επιτέλους θα αλλάξει η εμπορευματοποίηση στην παροχή υπηρεσιών και η μαζικοποίηση που είχε κατακλύσει την παγκόσμια αγορά. Θα αναβαθμιστεί η ποιότητα των υπηρεσιών και η συνολική προσέγγιση των επαγγελματιών στον τουρισμό. Θα πάρει ο καθένας τη δουλειά του στα χέρια του. Όλοι θα αναγκαστούν να ψάξουν την ταυτότητα τους, αυτό που τους διαφοροποιεί. Το 2021 είναι ακόμα αβέβαιο, αλλά είμαστε πολύ αισιόδοξοι. Έτσι θέλουμε κιόλας να είμαστε. Εμείς θα φροντίσουμε να σωθεί για τους συνεργάτες μας».

Hiking to Zagori’s storied Dragon Lake in Greece’s mountainous north west

In Epirus, the country’s wild northwestern state, a snaking five-mile trail rises above the stone-built villages of Zagori to reach the fabled Drakolimni, twin alpine lakes dating to the last ice age.

Departing in heavy mist, our hiking party zigzags its way up the mountain track from the still-sleeping village of Mikro Papigo, stopping to fill flasks at a spring-fed fountain half-concealed by the morning haze. Local lore claims our destination, the twin alpine pools of Drakolimni — ‘Dragon Lake’ in Greek — take their name from ancient duelling dragons once poised atop the opposing mountains of Tymfi and Smolikas. The boulders they cast at one another are said to stud the hillsides. 

Deflating the tale with a smile, guide Achilles Papaefthymiou explains that the age-old moniker may instead originate from the newts inhabiting the lakes. “They probably reminded the local villagers of miniatures of the fire-breathing creatures,” he says, with a note of apology. 

This more mundane telling doesn’t diminish the magic of Northern Pindos National Park. Resting at our first waypoint, the shuttered Astraka Mountain Hut, perched at 6,398ft, Achilles, founder of adventure tour company Alpine Zone, hands out homemade cake to nibble as we take in humbling views of the Towers of Astraka. One of Greece’s great natural wonders, the undulating wall of this impregnable massif looks like the turret from a giant’s castle, their buttresses and jagged crenelations carved by mighty hands.  

With the hardest part of the ascent still to come, some members of our party decide to turn back. The 10-hour round trip isn’t for amateurs, and we’re hiking in winter — out of season. Between May and October, the peak months for walking in the Epirus region, this hut is open and acts as a refuge, hosting up to 51 hikers. Here, they can restore energy levels with the hearty cuisine of northwest Greece — lentil soup and blatsaropita (a pie thrown together with whatever’s in the pantry), washed down with the local firewater tsipouro (produced with the indigenous Debina grape) or mountain tea made with wild ironwort. 

With no such facilities open at present, our weary companions are choosing to retreat to Megalo Papigo, among the most scenic of 46 traditional villages that make up the forested Zagori area. It’s a setting plucked from a fairytale: fertile gorges and flowing rivers encircle stone-built, slate-roofed homes with heavy wooden doors and cobblestone pathways. It’s the sort of place where dragons wouldn’t be entirely amiss.  

Our party lighter and our stomachs fuller, Achilles leads us onwards, fleshing out our understanding of the land. “In summer, we see wild horses and mules and the occasional brown bear,” he tells us. This is one of Greece’s most biodiverse areas, with more than 2,000 species of flora and fauna, home to wolves, chamois, roe deer, otters and such endangered birds as the Egyptian vulture. 

The winter is quieter, both in terms of hikers and wildlife; its silence is palpable, even as we crunch through knee-deep snow in the dried-out lake of Xerolimni. 

The forest has long given way to a naked, open landscape dotted with juniper shrubs. Climbing higher, the final ascent squeezes us into single file, following a slim path scooped from a scree slope that plunges away into nothingness on one side. 

Five hours into the trek, we summit the plateau at the foot of Mount Tymfi and Drakolimni reveals itself: frozen solid and enveloped in a snowy embrace. Some of the group skate across the ice; I squint up at Mount Smolikas, trying to spot the second pool and — just maybe — a dragon.

2020 was the year the world took a breath and travel had to reinvent itself. Due to the colossal earth-shake of the pandemic, what’s certain is that we’re going to be travelling more thoughtfully from hereon in. But perhaps, also, more gleefully. And while the way we travel might change, what we want from our precious holidays is, and will always remain, the same.

That’s why we’ve taken great care in selecting our top holiday destinations for 2021. On the list you’ll find a geographically diverse range of trips, from eco-cool enclaves in Central America to some of the best places in Europe. As always, we’ve listened to the surfers, the architecture buffs and the foodies; we’ve considered go-slow camping spots in Australia as well as buzzy African metropolises. With events such as the Olympic Games in Tokyo being postponed to 2021, we’ve thought about how these shifts will influence the holidays we take. There are some destinations that have been on our radar for a while – Vietnam, the Caribbean – and there are those that are reckoning with their own difficult past and, as is the case with Charleston, undergoing an important process of reinvention. 2020 has been the year of the staycation and with UK breaks at an all-time high, this year we’ve included not one but three top places to visit in the UK in 2021.

Whatever your tastes, these are some of the best holiday destinations for 2021. Of course, the options are endless, and the world will always be there for exploring (do check FCO advice and what the latest travel quarantine rules are before travelling), but this is our pick of the most-exciting spots to try and get to in 2021.

 

21. CHANIA, CRETE, GREECE

Inventive cooking and isolated beaches make for a perfect island escape

While its Ottoman-influenced harbour and spaghetti bowl of cobble-stoned streets are delicately beautiful, Chania is packing a real punch when it comes to its food. From simple seaside cafés to exquisite Cretan fine dining, this city on the north-west coast of the Greek island has a select but quickly expanding scene that’s luring in expert palates.

In the Old Town, Ginger Concept can appear a little pretentious but is a must-try – the lemon artichoke pizzas and deep-fried coxinhas are to die for. Elsewhere, no-frills locals’ favourites include To Maridaki for fish soup and Oxo Nou Studio, a little spot with wobbly outdoor tables overlooking the water. A little further out of town, impeccable fish restaurant Sunset at Sfinari beach calls for a well-worth-it coastal drive, while the hidden eco-retreat of Milia can be found far up in the mountains, serving farm-to-table Cretan cooking with breathtaking views. In Pollirinia – where languorous cats slip through the shadows like liquid – the Acropolis taverna is a magical little shack serving soul-warming home cooking beside the ruins of an old Roman town.

Hot new places to stay include The Tanneries, on the waterfront in historic Halepa – where 19th-century leather makers scoured their hides in saltwater – and the recently launched Elafonisi Villas, overlooking the islet’s cream and candy-floss beaches. Smack in the centre of town are Hotel Doma, a local classic bursting with antiques and character, and Casa Delfino with its fairytale foliage-filled courtyard.

 

20. SOUTH AFRICA

Cool creatives are at the forefront of a cultural renaissance

Like many countries, South Africa’s tourism industry has been through the wringer of late. But while the world has taken a forced break, a new generation of genre-busting creatives have been busy shining a light on the most diverse cultural community on the African continent. Biennales, fairs and new artist-run spaces are at the helm of the country’s enlivened art scene, with exciting local artists – including twin sisters Noncedo and Nonzuzo Gxekwa – getting prime wall space at galleries such as the Maitland Institute and The Centre for the Less Good Idea. All-women music festivals, Soweto township theatre groups and a burgeoning container coffee-shop scene in Maboneng draw the focus firmly onto Johannesburg. In Jozi, pan-African dinner clubs such as Yeoville, run by chef Sanza Sandile, rub up alongside lively rooftop bars and secret hole-in-the-wall spots in the bohemian suburb of Melville.

That’s not to mention the parade of fresh hotels and lodges waiting to welcome international guests in 2021, which includes Kruger Shalati – a stupendously smart cabin hotel stationed on a historical railway line – as well as AndBeyond’s new supremely good-looking solar-powered Ngala Treehouse, rising above the predator-filled bush on the edges of Kruger National Park.

Coronavirus and Travel: Everything You Need to Know

From international and domestic travel restrictions to cruise and hotel news, here’s what travel will look like this winter.

In these uncertain times, there are many questions that travelers desperately need answers to. We’re dedicated to reporting the most up-to-date advice, whether that’s about flight cancellations, how to quarantine properly after travel, or how destinations around the world are beginning to reopen. When we’ll travel again

Over the spring and summer, some destinations took the first steps toward reopening their cities to travelers: countries in Asia and several islands in the Caribbean encouraged tourism with entry requirements; museums including the Louvre and the Prado welcomed back visitors with reduced capacities that make for a more enjoyable experience; domestically, national parks like the Grand Canyon and Yellowstone also opened back up, as did Disney World, with changes, of course, (though some Disney fans aren’t ready to return).

But come fall and winter, the predicted second wave has forced recently reopened restaurants, offices, and entire countries to close again, with North America and Europe hit especially hard. Countries including Germany and Belgium are seeing case counts far worse than in spring. Parisians, who have entered a second lockdown, tell us that it feels different this time around. 

This new spike, just in time for the holiday season, has forced travelers to confront challenging ethical questions. Is it responsible to travel home for the holidays? Is it okay to fly if I’m only taking a short trip? Our new Ethical Traveler column has answers. For those who do to travel this season, we’ve asked medical experts your most pressing air travel questions—from how to make sure your family sits together to whether first class is safer than economy right now. (Plus, the best face masks, and face shields, for travel—and what to do if your seatmate won’t wear one.) Many of our staffers are rethinking the holiday calendar this year. Our favorite hoteliers, chefs, and world travelers tell us how they’re making an unusual holiday season feel special. We also tapped mental health experts and seasoned expats for advice on getting through the holidays alone at home.  

Some of our favorite bars and restaurants have shuttered for good; some small business owners say it could take until next spring to reopen. America’s lesbian bars are dwindling (though a new project is dedicated to trying to save them). The Tokyo 2020 Summer Olympics have been postponed to 2021, with a new opening ceremony date in place. Caribbean destinations are feeling the cancellation of Carnival celebrations. Even South African winemakers are hurting, as a domestic ban on the sale of alcohol has completely dried up the local market. Without international travelers, some African destinations are focusing on domestic tourism. Throughout it all, the CDC Museum in Atlanta is avidly documenting the pandemic for future generations.

There are signs of hope, too. We spoke to four chefs who opened new restaurants during the pandemic, and a boutique sailing company that underwent a relaunch. Destinations like Singapore, which had a particularly effective response to COVID, are creating the blueprint for reopenings elsewhere.

Airlines and airports are seeking relief while helping with the outbreak

A record number of planes have been grounded over the past few months, with more than 70 airlines grounding their fleets completely. The U.S. government is offering airlines $50 billion in bailout money—though there are a lot of strings attached. Airports are also asking the U.S. government for aid, given that they are projected to lose at least $8.7 billion in revenue this year as a result of coronavirus travel restrictions and dropping passenger numbers, and an attempt by airlines to reduce the airports they’re flying into.

There are still some planes in the air—including those transporting essential workers and supplies, and the rarer repatriation flights—which has forced airlines to implement new sanitation measures and temperature checks to protect passengers, and raised the question of immunity passports as a pre-boarding requirement in the future. (Such traffic has turned Dallas-Fort Worth into the busiest airport in the world.)

Some airlines have taken to blocking middle seats—something Delta plans to do through March, 2021. All major U.S. airlines are requiring passengers to wear face masks, and are banning fliers who refuse to comply. Emirates is pioneering a rapid coronavirus blood test, which it’s giving to passengers before they board. United and Alaska Airlines have added health questionnaires to the check-in process. United is also offering COVID tests for those traveling to Hawaii (though travelers to Hawaii will have to navigate a handful of additional requirements for entry).

Σε σχέση με τα ξενοδοχεία της χώρας μας που λειτούργησαν το 2019, μόλις το 60% του συνόλου των μονάδων τόλμησε να ανοίξει φέτος τις πόρτες του εν μέσω της πανδημίας και αυτό για πολύ βραχύτερο χρονικό διάστημα. Όπως άλλωστε ανέφερε πρόσφατα με πάσα ειλικρίνεια ο πρόεδρος του Ξενοδοχειακού Επιμελητηρίου Ελλάδος κ. Αλέξανδρος Βασιλικός στο πλαίσιο της τελευταίας έρευνας του Ινστιτούτου Τουριστικών Ερευνών και Προβλέψεων (ΙΤΕΠ), «ήταν και παραμένει ξεκάθαρο πως δεν υπήρχε θετικό σενάριο για φέτος με οποιονδήποτε παραδοσιακό δείκτη». Αν όμως η μία πλευρά μιας κρίσης σημαίνει «κίνδυνος», η άλλη όπως είχε τονίσει ο Τζον Φ. Κένεντι σε μία διάσημη ομιλία του το 1959, μπορεί να σημαίνει «ευκαιρία».

Η γνωστή αρχιτέκτονας Βάνα Περνάρη και ιδιοκτήτρια του luxury boutique «Casita Casita Lindos» στη Ρόδο πρόσθεσε, παρά τις αντίξοες συνθήκες, ένα ακόμα αρχιτεκτονικό παράσημο στη συλλογή της με μία συμμετοχή στα Design Awards.

«Τα International Hotel Properties Awards είναι μια εξαιρετική ευκαιρία να αναδείξουμε τη δουλειά του γραφείου μας στον κλάδο και στην παγκόσμια κοινότητα», μας είπε. «Tα κριτήρια επιτυχίας βασίζονται στην δημιουργική αριστεία και στην εμπορική βιωσιμότητα. Η συμμετοχή μας αφορούσε το Ξενοδοχείο «Cretan Malia Park» του ομίλου Phaea Resorts στην Κρήτη, μέλος των Design Hotels, στην κατηγορία Hotel Over 200 Rooms Europe. Μία εξαιρετική συνεργασία με τις Αγάπη και Κωνστάντζα Σμπώκου που ταξίδεψε και εκτός συνόρων. Είναι πολύ μεγάλη η σημασία και η ευθύνη ως αρχιτεκτονικό γραφείο να μοιραζόμαστε τη δουλειά μας σε μια τόσο μεγάλη διεθνή πλατφόρμα όπως το design et al, όπου συνυπάρχουμε με τα εξαιρετικά νέα έργα φιλοξενίας σε όλο τον κόσμο. Επίσης, είμαστε πολύ χαρούμενοι και περήφανοι εγώ και η ομάδα μου, καθώς το συγκεκριμένο project είναι shortlisted στα Ahead Awards Europe, σε τρεις κατηγορίες – Lobby & Public Spaces, Resort Hotel, Restaurant. Βραβεία για την φιλοξενία, την εμπειρία και τον σχεδιασμό».

Επόμενη στάση αποτέλεσε το διαμάντι που δημιούργησε σε μία μαγευτική βραχώδη περιοχή της Λίνδου. «Αισθάνομαι πως η φιλοξενία αποτελούσε πάντα μεγάλο κομμάτι της ζωής μου. Οι γονείς μου Ροδίτες, μετακόμισαν όταν παντρεύτηκαν στην Θεσσαλονίκη όπου και γεννήθηκα», θυμάται. «Λίγο αργότερα κατεβήκαμε στην Αθήνα, οι γονείς μου επέστρεψαν στη Ρόδο όταν συνταξιοδοτήθηκαν, και εγώ επέστρεψα μόνιμα στη Ρόδο το 2000. Όλα τα χρόνια στην Αθήνα θυμάμαι να φιλοξενούμε πολύ συχνά φίλους και συγγενείς από τη Ρόδο στο σπίτι μας. Η μητέρα μου, ένας ιδιαίτερα φιλόξενος άνθρωπος, είχε το σπίτι πάντα ανοιχτό και εγώ χωρίς να το καταλαβαίνω συμμετείχα σε μία τελετή φιλοξενίας. Από την υποδοχή των καλεσμένων, έως την προετοιμασία του φαγητού και το στρώσιμο του τραπεζιού. Τα πάντα για να ευχαριστήσουμε τους φιλοξενούμενούς μας και να τους κάνουμε να αισθανθούν σαν στο σπίτι τους».

Αυτή της η «κληρονομιά» και η εμπειρία της ως αρχιτέκτων σε ξενοδοχεία και χώρους εστίασης, θα οδηγούσαν με μαθηματική ακρίβεια στο «Casita Casita Lindos». «Ο χώρος αυτός νομίζω ότι ήρθε και με βρήκε», μας δήλωσε. «Κάποιος συνεργάτης μού μίλησε γι’ αυτόν, ένα σπίτι που ήταν κλειστό για 10 χρόνια. Υπήρξε μια σύνδεση από την πρώτη στιγμή. Μετατράπηκε σε χώρο φιλοξενίας με πολλή φροντίδα, απλά, όπως ταιριάζει στο τοπίο, στον βράχο που το περιβάλλει και στις αιωνόβιες ελιές του κήπου».

Η Ρόδος είναι μία ιδιαίτερη αγορά που έχει διαμορφωθεί από πολύ μεγάλες και πολύ σπουδαίες, all-inclusive μονάδες, άρα η ανάπτυξη μιας πιο boutique φιλοσοφίας στο νησί δεν ήταν εύκολη υπόθεση. Ούτε και η ίδια η σύστασή του. «Ο σύντομος χρόνος υλοποίησης καθώς και η εύρεση του κατάλληλου προσωπικού ήταν το δυσκολότερο μέρος της διαδικασίας», περιγράφει η καταξιωμένη αρχιτέκτων. «Για εμένα προτεραιότητα έχουν ο χαρακτήρας και η στάση. Οι δεξιότητες έπονται».

Όσο για την αίσθηση εκλεπτυσμένης πολυτέλειας του «Casita Casita Lindos», αυτή προέρχεται εν μέρει από την απλότητα του εναρμονισμού του με το φυσικό κάλλος του τοπίου, αλλά και από την ανθρώπινη προσέγγιση.

«Η πολυτελής υπηρεσία στον πυρήνα της δεν έχει να κάνει με χρυσά φύλλα», τονίζει. «Η αληθινή πολυτέλεια έχει να κάνει με τον άνθρωπο. Θεωρώ ότι θα πρέπει να χρησιμοποιήσουμε την τεχνολογία για να γοητεύσουμε τους φιλοξενούμενούς μας, χωρίς όμως να θυσιάζουμε την ανθρώπινη επαφή. Να δώσουμε στους επισκέπτες μας μια εμπειρία γεμάτη κουλτούρα και μικρές ‘τελετές’, μοναδικές σε κάθε τόπο».

Ενάντια στις προσδοκίες μίας «νεκρής» τουριστικής σεζόν όπως ονομάστηκε η φετινή, το στολίδι της στη Ρόδο επέδειξε αξιοσημείωτες επιδόσεις. Ένα μέρος της εξήγησης φαίνεται πως ήταν οι καλές της αντιστάσεις στον φόβο. «Ο φόβος είναι πολύ κακός σύμβουλος, τον αποφεύγω», εξηγεί. «Λειτουργώ πολύ με το ένστικτο και με πολλή αγάπη για ό,τι κάνω. Προσπάθησα να παραμείνω ψύχραιμη, αισιόδοξη αλλά και συνειδητοποιημένη φυσικά, παρατηρώντας μέρα με τη μέρα την εξέλιξη αυτής της ιδιαίτερης σεζόν. Σπεύσαμε άμεσα να προσαρμοστούμε στις νέες απαιτήσεις φροντίζοντας να παρέχουμε την ίδια – και καλύτερη – εμπειρία φιλοξενίας στους επισκέπτες μας».

Το άλλο μέρος της εξήγησης είναι η συνεργασία της με τη «Web Hotel Way». Μία ομάδα νέων ανθρώπων που προέρχονται από τον χώρο των ξενοδοχείων και έχουν καταφέρει να ξεχωρίσουν στον τομέα του hotel management με τη φρεσκάδα τους, τη διαφορετική φιλοσοφία τους, και τις καινοτόμες, πάντοτε προσαρμοσμένες πάνω στις ανάγκες της κάθε μονάδας, λύσεις που προτείνουν.

«Η Web Hotel Way μάς ανέλαβε στην πιο δύσκολη εποχή που βιώνει ο πλανήτης μας και μαζί δημιουργήσαμε ένα πλάνο ώστε να δουλέψουμε και να είμαστε βιώσιμοι», αναλύει. «Χαρτογράφησαν από την αρχή τον συνολικό τρόπο λειτουργίας του ξενοδοχείου, αφουγκράστηκαν την παγκόσμια αγορά, δημιούργησαν απευθείας τις πολιτικές κράτησης και ακύρωσης που είχε ανάγκη ο επισκέπτης, και ήταν σε συνεχή επαγρύπνηση ώστε να μπορούν να αλλάξουν οι πολιτικές αυτές αναλόγως με τα γεγονότα. Με τη βοήθειά τους κάναμε διασπορά στις αγορές ώστε να μην εξαρτόμαστε μονάχα από μία και δημιουργήσαμε μια εικόνα κατανόησης απέναντι στους επισκέπτες μας για να νιώθουν εμπιστοσύνη και ασφάλεια. Η τήρηση των μέτρων ασφαλείας έγινε στο έπακρο και ήταν κύρια προτεραιότητα, ο ανοιχτός δίαυλος επικοινωνίας και ενημέρωσης όμως με τους επισκέπτες μας ήταν επίσης ύψιστης σημασίας».

Στους μήνες του Ιουλίου και του Αυγούστου το «Casita Casita Lindos» είχε κάλυψη διανυκτερεύσεων στο 74%, ο Σεπτέμβριος έκλεισε με πληρότητα άνω του 82% και ο Οκτώβριος έχει φτάσει ήδη το 72,4%, ενώ την ίδια περίοδο η Λίνδος είχε 36% κάλυψη και η Ρόδος 41% συνολικά. «Είχαμε αύξηση της τάξεως του 34% στη μέση τιμή ανά διανυκτέρευση, όταν στη Λίνδο υπήρξε 40% μείωση στη μέση τιμή ανά διανυκτέρευση και στη Ρόδο αντίστοιχη 43,5% ανά διανυκτέρευση. Το 55% των επισκεπτών μας έκλεινε τελευταία στιγμή, μεταξύ μίας έως επτά ημερών πριν την άφιξη, ενώ στη Λίνδο οι last minute κρατήσεις υπήρχαν στο 36% και στη Ρόδο συνολικά στο 42%», αναφέρει ο Γιώργος Λαγουδάκης της Web Hotel Way, η οποία ετοιμάζεται να συμμετέχει στο προσεχές 100% Hotel Show, την πιο exclusive έκθεση τουρισμού στην Ελλάδα.

«Μπορεί να μην είμαστε νέοι στον ευρύτερο χώρο της φιλοξενίας», συμπληρώνει η αρχιτέκτων, «σαν ξενοδόχοι όμως μετράμε μονάχα δύο σεζόν. Είναι πολλά αυτά που μάθαμε μέσα από αυτή την εμπειρία και χρόνο με τον χρόνο προσπαθούμε να βελτιωνόμαστε, να εξελισσόμαστε αλλά και να εμπλουτίζουμε το προϊόν μας για την καλύτερη δυνατή εμπειρία των επισκεπτών μας. Έτσι και φέτος, έχουμε ήδη ξεκινήσει το σχεδιασμό της επόμενης σεζόν εξετάζοντας το πώς θα εμπλουτίζουμε τόσο τις παροχές όσο και τους χώρους μας. Ως αρχιτέκτονας βλέπω τους δικούς μου χώρους σαν ζωντανά, διαρκώς μεταβαλλόμενα περιβάλλοντα όπου πάντα κάτι θα θέλω να αλλάξω. Στον συγκεκριμένο χώρο προετοιμάζουμε διάφορες ‘τελετές’ ευεξίας, γαστρονομικές εμπειρίες καθώς και ‘εμπειρίες’ ανάπαυσης».

Παρότι τα μακροπρόθεσμα πλάνα μοιάζουν πια με ιδέες κάποιας άλλης εποχής, τα άμεσα μελλοντικά σχέδια της δημιουργού αψηφούν και αυτά τις προσδοκίες. «Έχουμε αναλάβει ένα εξαιρετικό, μεγάλο project που περιλαμβάνει χώρους εστίασης, βρίσκεται εκτός Ελλάδας και το οποίο μου επιτρέπει να κάνω μακροπρόθεσμα σχέδια», μας εκμυστηρεύεται. «Επιπλέον, είμαι ενθουσιασμένη για τα project που πρόκειται σύντομα να ολοκληρωθούν στο νησί μας, καθώς και γι’ αυτά που ξεκινάμε τώρα. Τέτοια εποχή ξεκινάμε συνήθως νέες δουλειές και συνεργασίες με μεγάλο ενθουσιασμό και όρεξη να ανακαλύψουμε, να δημιουργήσουμε, και να εξελιχθούμε».

«Όλη αυτή η κατάσταση μας ωθεί όλους να αναλογιστούμε και να επικεντρωθούμε σε αυτό που πραγματικά είναι σημαντικό», συνέχισε. «Νέα δεδομένα και παράμετροι που πρέπει να ληφθούν υπόψιν στον αρχιτεκτονικό σχεδιασμό προκύπτουν συνεχώς, πράγμα αρκετά απαιτητικό αλλά και πάρα πολύ ενδιαφέρον. Επίσης, είναι πολύ ευχάριστο και ελπιδοφόρο το γεγονός ότι το περιβάλλον και η βιωσιμότητα λαμβάνουν επιτέλους όλο και μεγαλύτερη προτεραιότητα στα έργα, αποτελώντας έναν από τους βασικότερους άξονες στον αρχιτεκτονικό σχεδιασμό. Αισθάνομαι πως είναι υποχρέωσή μας σαν μελετητές να κάνουμε ό,τι καλύτερο μπορούμε και περνάει από το χέρι μας για το περιβάλλον».

Όσο για τους επαγγελματίες του τουριστικού τομέα που νιώθουν να βρίσκονται στη μέση μιας καταιγίδας που δεν έχει ακόμα ξεσπάσει, το μήνυμά της είναι το ελπιδοφόρο, αγαπημένο της μότο: “Never ever say no. Something is always possible”.

Guests staying over five days at Atlantis, The Palm in Dubai can book free PCR testing in the comfort of their own suite thanks to a partnership with “leading hospitals.” The staff takes care of the red tape, while guests relax and … enjoy?

At Garden of the Gods Resort and Club in Colorado Springs, real-life caddies and golf carts have been replaced by new Tempo Walk tech — a hands-free, autonomous caddie complete with GPS yardage and the capacity to hold a cooler of untouched drinks.

At the brand new Villa Copenhagen, which opened in a century-old Danish post office on July 1 under the Preferred Hotels & Resorts umbrella, not only is there keyless entry and remote check-in available (a now common offering), but the TVs in each room automatically populate QR codes for new guests, who can then activate their smartphones as remote controls.

And, in cases when visitors must touch an object, the folks at The Deer Path Inn in Lake Forest, Illinois, want them to know they’re the first to handle it. To mitigate concern, the hotel is embroidering/printing guests’ names on in-room canvas laundry bags and disposable room service menus.

And the historic Beverly Hilton in Los Angeles, best known for hosting The Golden Globes, has brought in hospital-approved UV Xenex LightStrike Robots to “zap” germs around the hotel and in guest rooms for eight to 10 minutes after the housekeeper has cleaned and vacated.

 

The Westin Cape Coral Resort at Marina Village in Florida is taking that notion of in-room refreshments to the next level. Through their new “Fridge Fill” program, guests can skip restaurants and grocery stores and instead have their refrigerators and pantries stocked in advance of arrival with ready-made meals, groceries, ingredient baskets with recipes and more.

Eventually, though, most people will venture out, which is why visitors to the Conrad Fort Lauderdale Beach may be grateful to the hotel’s new social distancing ambassadors, who are positioned around the property to remind people to stay 6 feet apart and also limit the number of guests in the pool.

Still unsure? Before venturing out at Hoshino Resorts (a Japanese hospitality brand), guests can download a smartphone app that allows them to monitor the number of people in the property’s public spaces — in real time.

Outside the box

Many properties are encouraging guests to get outdoors, where the risk of transmission is lower.

Resorts are taking restaurant experiences outside, as well.

Why remote work vacations are the biggest travel trend

As the colder temperatures of the fall and winter months start to move in, people who are able to work from home are figuring out more favorable locations to ride out the pandemic. Workers and students are packing up their laptops and head out to places like beaches and mountain retreats.

“This year the traditional vacation calendar has flown out the window,” says Melanie Fish, a travel expert from the vacation rental company VRBO. “Instead of waiting until the holidays, spring break or next summer to book a getaway, families who may have chosen online school and work are taking advantage of the newfound flexibility those things offer to travel all fall and winter.”

That’s what Jill Wheeler from Boulder, Colorado did with her family when school started this year. Wheeler and her husband are entrepreneurs with the flexibility to work remotely. The family also loves watersports, so they took this opportunity to go across the country to spend two weeks in the Outer Banks, North Carolina.

“Once we found out our 13 and 15-year-old daughters’ schools went virtual, we felt it would be a perfect time to share the plethora of adventure opportunities the Outer Banks offers,” Wheeler says.  

Making remote work and school life work 

“Long weekends are trending up – with a higher proportion of travelers taking 3-day weekends Friday – Monday; Thursday-Sunday or the 4-day, Thursday to Monday weekend,” says economist Hayley Berg. And it is not just for domestic US travel. “On Hopper, we are also seeing an increase in length of stay for most international regions.”

Over the summer, road travel reached pre-pandemic levels, and campsites, cabins, and RV parks continue to be booked through fall. Which means people are hitting the road this year as much as they did in previous years. Choice Hotels reported in August that nearly one-fourth of the hotel chain’s revenue came from customers traveling less than 25 miles to a hotel. And an almost 30% increase in stays more than seven nights, as compared to August 2019.

Το νησί του Mamma Mia όπως είναι ευρύτερα γνωστό κατέκτησε την 6η θέση στην λίστα αφού σύμφωνα με το δημοσίευμα τα γραφικά της σοκάκια, οι ταβερνούλες, ειδυλλιακά τοπία και οι Βυζαντινές εκκλησίες συνθέτουν έναν απόλυτο ταξιδιωτικό προορισμό.

Τελός τονίζει ότι δεν επιλέχτηκε τυχαία για να γυριστεί εκεί η ταινία «Mamma Mia» που είναι γνωστή σε παγκόσμιο επίπεδο.

Αυτό άλλωστε μαρτυρούν και οι πρόσφατες διεθνείς διακρίσεις του προορισμού αλλά και τα πρώτα μηνύματα που δεχόμαστε από τουρίστες και ταξιδιωτικά γραφεία για το 2021».

Why new hotels are opening amid the pandemic

Despite the bleak scenario and the continuing pandemic, there is a bright spot: from Europe and the United States to Africa, Asia and Australia, a spate of new hotels from bigger brands as well as smaller owners are set to open this fall and into the winter.

“The next several months are a busy time for hotel openings,” says Leo Sorcher, the founder of luxury travel company Inhabit the World. “They show a light at the end of this long tunnel.”

In the United States, The Inn at the Mission San Juan Capistrano in California will open in September in the heart of downtown near the city’s famous 19th century church ruins. Also in September, the artists enclave and celebrity hideaway of New Hope, Pennsylvania, will see the opening of luxury boutique property River House at Odette’s. Come November, Palm Beach will have White Elephant, the second location of Nantucket’s well-known eponymous resort.

In Europe, London will have two new hotels in the fall: The Mayfair Townhouse, in Mayfair, along with The Mitre Hampton Court. In Madrid, the Mandarin Oriental Ritz is set to make splashy debut in early 2021.

The list goes on and includes One&Only Desaru Coast in Malaysia, Angama Safari Camp in Kenya’s Maasai Mara and The Oval Hotel in Adelaide, Australia, on the grounds of the city’s Oval stadium.

Delayed, not dead

 

Most of the properties making their debut in the coming months had their original opening dates pushed later because of the pandemic, but even in a battered economy, they didn’t abandon their plans to go forward.

River House at Odette’s was due to open early this summer instead of September. Ron Gorodesky, the developer and managing director, said that the hotel was under construction when Covid-19 hit and forced the project to a temporary stop. “We’re only delayed by a few months but have seen a huge financial loss,” he says. “We had 40 weddings scheduled this year, and most have gotten moved to next year while a handful were canceled.”

But Gorodesky never thought not to open. “New Hope is a great destination year-round with an incredible arts scene and restaurants,” he says. “I believe in the drive market potential.”

 

Opening a high-end hotel, something there is a dearth of in New Hope, is also an incentive to stay committed to River House, according to Gorodesky. The 36-room property has a contemporary design, Prohibition style rooftop club and a piano lounge featuring live music.

The Mayfair Townhouse in London is also delayed by a few months while The Mitre Hampton Court is actually on track to open in September as planned.

Sorcher says that these delays are minor in the bigger picture and par for the course even in ordinary circumstances. “Openings get pushed all time. It’s almost expected,” he says.
